Sage Cornbread Waffles

Sage cornbread waffles are a savory twist on traditional waffles, made with a cornbread batter that includes sage as an ingredient. The addition of sage gives the waffles a unique and flavorful taste that pairs well with any toppings such as butter, syrup or a Honey Sage Sauce.

Ingredients

  • cup buttermilk
  • 2 large eggs
  • 2 tbsp honey
  • 1 cup cornmeal
  • cup all-purpose flour
  • 2 tsp baking soda
  • tsp fresh sage, finely minced
  • 1 tsp sea salt
  • 5 tbsp butter, melted and cooled slightly
  • non-stick cooking spray for waffle iron

Equipment

  • Mini Waffle Iron *See example below recipe.

Method

  1. Make the waffle batter: Whisk together the buttermilk, eggs and honey in a small bowl. Whisk together the flour, cornmeal, baking powder, baking soda, sage, and fine sea salt in a large bowl. Make a well in the center of the dry ingredients, add the wet ingredients and gently whisk together until just combined (do not over mix). Fold in the butter, cover the bowl with plastic wrap and refrigerate the batter.
Make the waffles: Heat the mini waffle iron according to manufacturer's instructions. Spray with nonstick pan spray, then ladle about 2 tbsp of the batter into each grid, close, and cook until golden brown on both sides and steam stops coming out from the iron, about 4 minutes. Transfer the waffles to a baking sheet for and place in the oven set on warm until ready to use.
